Operating Principle:

The high kneader is designed with two spiral blades rotating in opposite direction and transferring the product from the outer side to the center which results in homogenizing the mixture of the cryoprotectants (sugar, polyphosphates, etc) with the fish meat.  It is recommended to premix the ingredients added in small percentage (polyphosphates, egg white powder) with the main ingredient (sugar, sorbitol) to reduce the mixing and facilitate an even distribution in the product.
